When it is cold and rainy, the only thing I want is soup and corn bread. I think it is half because it is warm and yummie and half because it reminds me of home....pure comfort food! Last night I made Lentil Soup, a first. It was really yummie! I added chicken sausage and fresh spinach. It was just what the doctor ordered! And now a little info on the Lentil:
Lentils, a small but nutritionally mighty member of the legume family, are a very good source of cholesterol-lowering fiber.
